They are a small Romanian winery from Transylvania, of only 43 hectares.
That's why they are (and can afford to be) very attentive to details.
Determining the time of harvest is done through a careful follow-up, at least a month before, so that the grapes have accumulated as much sugar as possible.
The picking is done exclusively by hand and with great care, so that the bunches do not come into contact with the metal until they reach the winery for processing.
The organization of the harvesting is done carefully and the processing is done in stainless steel machines, thus avoiding the complex chemical process of deferrization. In a first stage, the grains are de-stemmed, then they are crushed without breaking the skins and seeds.
To extract the aromas from the skin, in the case of the aromatic Muscat Ottonel and Sauvignon Blanc varieties, the beans are macerated for 24 hours. After maceration, the must is obtained by draining and then pressing, followed by its clarification.
After clarification, the must is subjected to fermentation, the process being triggered by the addition of selected yeasts. Fermentation proceeds in a controlled, cold manner, at a temperature of up to 14 °C, with a duration of approximately 12 days. At the end of fermentation, after being removed from the yeast, the wine benefits from a well-deserved rest period of at least one month.
CELLAR
The thick and cool walls of the cellar and the coolness of the earth provide the necessary peace and balance, as the wine begins to shape its character.
Excavated 20-25 meters below the hill guarding the mansion, in 1784, the cellar of Cramei Țelna is unique in the region.
Having the shape of the letter "U", it is no less than 150 meters long and 6 wide.
This is the decisive space for perfecting the wines.
Here, the temperature (10-11 degrees Celsius) and humidity (98-100%) are constant throughout the year thanks to the noble mold and the natural ventilation provided by the niches in the three-meter high stone vault.
THE BUILT MANSION
IN THE 17TH CENTURY
The cellar of Cramei Țelna is part of a complex of buildings, built in the first half of the 17th century.
As soon as you step beyond the gate, into the stone-paved courtyard, you are engulfed by the picturesqueness and tranquility of the place, and a pleasant feeling of returning to other times gently envelops you...
The complex of buildings was built with thick walls and arched vaults, in the architectural style specific to medieval Transylvania with elements of late baroque, of Austrian origin.
The mansion, which represents the main building of the complex, is built on one level: on the ground floor, dug under the hill behind it, there are the cellar and the wine cellar, and the upstairs space was for living.
The entire ensemble was preserved; the original wooden carpentry is still preserved.
It is included in the list of historical architectural monuments.
VINEYARD
Crama Țelna draws its juice from the Alba Iulia Vineyard, one of the oldest Transylvanian vineyards, lying on the right side of Mureș, towards the southern hills of the Apuseni. The wonderful plains of Șard, Țelna, Cricău and Ighiu form the "heart of the vineyard".
The vineyard has a privileged geographical position, at a high altitude of over 500 m, sheltered from winds, cold currents or fog, with a mild climate and long autumns that give the grapes time to ripen at their leisure.
On the 43 hectares we produce only four varieties, all white: muscat ottonel, fetesca regale, sauvignon blanc and chardonnay.
Due to the altitude and pedoclimatic conditions, a semi-high, unilateral cordon, semi-protected culture system was chosen. The land has a southern exposure, the rows of vines are located in the East-West direction, which makes the grapes reach a high level of accumulation of sugars and aromas, while maintaining high acidity, which gives them freshness and a appetizing fruitiness.
Chardonnay
DRY WHITE WINE
A full-bodied and harmonious wine, which greets you with a straw yellow color and intense greenish notes, synonymous with freshness. A wide range of olfactory notes starting with fresh fruit and acacia flowers accompany the balanced taste, with intense and pleasant aromas.
Royal Maiden
DRY WHITE WINE
The wine first appears in golden sparkles and delicate green reflections, then revealing its complex aromas, with accents of ripe fruit and white flowers.
This wine has appreciable aroma and structure when young, but aging in the bottle will add character and olfactory complexity.
Cuvee
DEMISEC WHITE WINE
Muscat Ottonel and Feteasca Regală
This wine greets you with an enveloping perfume, with complex fruity notes and fine accents of citrus, lime and green apple. Then it reveals its strong but balanced taste, with an extremely pleasant harmony of fruit at every moment of tasting and a notable lingering.
Muscat Ottonel
DEMISEC WHITE WINE
A rich, full Muscat Ottonel, balanced in acidity and exuberant in aromatic notes. A fine scent of dried roses and apricots accompanies the taste with a remarkable lingering.
Sauvignon Blanc
DRY WHITE WINE
This Sauvignon Blanc, with reflections of a bright green and ample, fresh and balanced taste reveals itself with intensity and surprises with complex perfumes subtly reminiscent of exotic fruits, melons and yellow pepper.
